How to Make Perfect Vegetable Biryani: A Flavorful Indian Rice Dish
Vegetable Biryani is one of the most loved and vibrant dishes from Indian cuisine. Packed with fragrant basmati rice, colorful vegetables, and a rich blend of spices, it's a complete and satisfying meal. Ingredients You'll Need
For the Rice:
2 cups basmati rice (soaked for 30 minutes)
1 bay leaf
3–4 cloves
2 green cardamoms
1 small cinnamon stick
Salt to taste
6 cups water
For the Vegetables:
2 tbsp oil or ghee
1 large onion, thinly sliced
1 tsp cumin seeds
1 tbsp ginger-garlic paste
1 carrot, diced
1 cup cauliflower florets
1/2 cup green peas
1/2 cup chopped green beans
1 chopped tomato
1/2 cup plain yogurt
1 tsp turmeric
1 tsp red chili powder
1 tsp garam masala
Fresh coriander and mint leaves for garnish
Optional:
Fried onions
Saffron strands soaked in warm milk
Instructions
1. Cook the Rice
Boil the soaked basmati rice with spices (bay leaf, cloves, cardamoms, cinnamon) and salt until 80% cooked. Drain and set aside.
2. Prepare the Vegetables
Heat oil or ghee in a large pan.
Add cumin seeds and let them splutter.
Add sliced onions and sauté until golden.
Stir in ginger-garlic paste and cook for a minute.
Add tomatoes and all the vegetables. Cook for 5–7 minutes.
Mix in turmeric, red chili powder, garam masala, and salt.
Stir in yogurt and cook until the mixture is well combined.
3. Layer the Biryani
In a large pot or baking dish, spread a layer of vegetables.
Add a layer of rice.
Sprinkle coriander, mint, fried onions, and saffron milk (if using).
Repeat the layers.
4. Cook (Dum Method)
Cover tightly and cook on low heat for 15–20 minutes or bake in a preheated oven at 180°C (350°F) for 20 minutes.
Serving Suggestions
Serve hot with raita (yogurt sauce), pickle, or a side salad.

Don’t overcook the rice – it should be firm.
Use fresh herbs for maximum flavor.
